Cauliflower Couscous - A Revelation for Those who are Wary of Carbs
Cauliflower couscous- I know what you're thinking, it's a bowl full of vegetables and it sounds boring or horrible. That's what I thought too, but you're wrong! Cauliflower cous cous is a great substitute if you're trying to cut down on carbs, and it actually tastes nice too! And I don't even like cauliflower! So how do you make it? Read on to find out...
Put 150g cauliflower cous cous in a food processor and whizz up until it's a couscous-like consistency.
Pan fry one small birds eye chilli, one clove of garlic, half a small red onion, a teaspoon of ginger and a teaspoon of turmeric in some olive oil until the vegetables are soft. Add the cauli and cook for a couple more minutes.
Roughly chop 30g sundried tomatoes and 10g flat leaf parsley. Remove the pan from the heat and mix it all together. Serve with chicken or lamb.
