Rice Paper Rolls - The Simple, Healthy Recipe to Fit Into Your Little Black Dress

 Are you, like so many of us, aiming to beat the bulge this winter? This healthy, delicious recipe will allow you to enjoy a hearty, filling lunch or dinner whilst helping you fit into your favourite little black party dress. Rice paper rolls are also super easy to make and can be made ahead so you always have some healthy food to hand.

Makes 6 Rolls

Ingredients 

1 tablespoon of sesame oil

1 chicken breast, chopped into strips

1 red pepper, chopped into strips

1 spring onion, chopped

1 teaspoon of chilli flakes

1 teaspoon of soy sauce

6 sheets of rice paper

 

Method

Heat the sesame oil in a frying pan, then add the chicken and fry until chicken is sealed. 

Add the spring onion and capsicum and cook for a few minutes until veg softens and chicken is cooked through. Add chilli flakes and soy sauce and cook for a couple of minutes to allow the flavours to infuse. Then take the pan off the heat. 

Pour boiling water into a wide, shallow dish. Dip one rice paper into the dish for about 10 seconds until the paper softens, then transfer to a plate. Place some filling towards one side of the rice paper, leaving a small gap from the edge. Begin rolling the rice paper over, folding in the sides after the first roll, making a tight parcel. Repeat these steps with the remaining rolls.

This recipe can also be adapted to include a range of your favourite fillings.
