Chicken and Prawn Paella
Calories per serving - 498
3 chicken breast fillets, diced
3 tablespoons olive oil
1 large red onion, finely chopped
1 crushed garlic clove
2 tsp ground turmeric
200g peeled and cooked prawns (optional)
220g paella rice
600ml chicken stock
1 red pepper, diced
A couple of handfulls of frozen peas
Salt and black pepper
1. Fry the chicken in the olive oil until it is cooked through. Then add the onion, garlic and turmeric and cook until the onion softens.
2. Add the prawns, rice and stock and bring to the boil. Season with salt and pepper, then reduce to a medium heat and cook until the rice has absorbed most of the stock, stirring occasionally.
3. Add the pepper and peas and cook for around 10 minutes, until all of the stock has been absorbed by the rice.
